Tuna




Ingredients:
3 potatoes
1 tablespoon butter
1 onion
1 clove garlic
1 red paprica
2 cans tuna
2 eggs
2 tablespoons lemon juice
1 teacup flour
1 teacup breadcrumbs
2 tablespoons milk
parsley (fresh if available)
vegetable oil to fry them in
Directions:
Boil the potatoes, skin them and mash them while they are still hot.
Finely chop the onion, the garlic and the paprica. Stir fry them in a pan with the preheated butter.
Drain the tuna fish and mash it in a bowl. Add the lemon juice, the stir fried veggies and the finely chopped parsley. Add the one of the eggs, mash the mixture and shape the burgers from it.
Mix the other egg and the milk in a bowl. Roll the burgers in the flour then in the egg mixture and then in the breadcrumbs. Leave them in the fridge for 30 min.
Fry the fish burgers in the preheated oil for about 2-3 minutes each side and then put them on kitchen paper to drain the excess oil.
Serve hot.
