Steamed Sea robin with leek and tomatoes

  • 1 leek
  • 3 tomatoes
  • 2 garlic cloves
  • 600 g sea robin fillets
  • Salt
  • 3 tablespoons vegetable oil
  • 1 teaspoon brown sugar
  • 2 tablespoons soy sauce 
  • 2 tablespoons tomato ketchup
  • Cayenne pepper
  • Chop the leek into rings
  • Peel the tomatoes, remove the seeds and chop into stripes
  • Peel and chop the garlic
  • Rinse the fish fillets with cold water, drain and add a pinch of salt to each.
  • Place the fish in a metal colander over a cooking pan with boiling water for about 10 minutes with closed lid.
  • Preheat the oil and stir-fry the leek and the garlic with the sugar for 4 minutes on moderate heat. Add the tomatoes, cook few more minutes and add the soy sauce, the ketchup and a pinch of cayenne pepper.
  • Place the steamed sea robin filets in dishes and pour the sauce mixture over them.
