Steamed Sea robin with leek and tomatoes
Ingredients:
- 1 leek
- 3 tomatoes
- 2 garlic cloves
- 600 g sea robin fillets
- Salt
- 3 tablespoons vegetable oil
- 1 teaspoon brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons tomato ketchup
- Cayenne pepper
Directions:
- Chop the leek into rings
- Peel the tomatoes, remove the seeds and chop into stripes
- Peel and chop the garlic
- Rinse the fish fillets with cold water, drain and add a pinch of salt to each.
- Place the fish in a metal colander over a cooking pan with boiling water for about 10 minutes with closed lid.
- Preheat the oil and stir-fry the leek and the garlic with the sugar for 4 minutes on moderate heat. Add the tomatoes, cook few more minutes and add the soy sauce, the ketchup and a pinch of cayenne pepper.
- Place the steamed sea robin filets in dishes and pour the sauce mixture over them.
