Sea Urchin

Ingredients:
As much sea urchin as you can find, clean and eat and some lemon.
Directions:
There is no cooking. The recipe here is more a guide to find, catch and eat :)
You can find sea urchin almost everywhere around the sea and ocean coasts. They stuck on to rocks and it is very painful if you touch it. So be careful. The trick is to gently remove it from the rock.
So you got about a full bag of sea urchin.
Now here is the annoying part. You have to get to the roe. To do that you have to very carefully crack the shell into two pieces. If the shell breaks to more than two pieces you better toss it, as the roe will mix with the other staff which does not taste right.
When the shell is open you will see few pieces of orange roe. If it is not orange than it is no good. Toss it.
Use the smallest spoon you have to extract the orange roe. Try not to break the pieces and keep them as clean as possible.
When you finish with the cleaning, it is important to give them a quick rinse in fresh water or they will not taste right.
They are good with a bit of lemon.
And that’s it…
You can eat the roe just like that. Or you can smear it on a piece of toast with butter.
They are very good and also one of the strangest things you can eat.
