Ingredients:
Four mackerel fish
Two table spoons olive oil
Salt and black pepper to taste
For the sauce:
One can (500 gr) chopped and piled tomatoes
The white part of two leeks
Two sour cucumbers
Four table spoons olive oil
Handful of olives (without the pits)
One tea spoon dried chopped tarragon
Two pinches of salt
Directions:
Clean the fish, salt it and smear with the black pepper. Leave it for 10 to 15 minutes and then place it in a oiled baking dish.
Bake it in a 180C° oven for about 40 minutes (till cooked good).
The sauce:
Pour the four spoons of oil in a deep pot.
Chop the leeks and fry them for few minutes. Add the tomatoes and the salt.
Leave it for 10 minutes and then add the chopped sour cucumbers and olives.
Season with the tarragon and simmer for another 3-4 minutes.
Remove the bones from the baked fish and pour the fillets with the sauce.
Can be served with smashed potatoes or braised rice.
